Dining at Goreva Hotel Haven is structured around two philosophies operating simultaneously under one roof: the communal fire-driven energy of Forge & Fold, where eighty guests share the theatre of an open kitchen, and the focused intimacy of The Counting Room, where sixteen guests receive a degustation whose courses are written fresh each week. Both venues serve guests who regard a meal as the centrepiece of an evening rather than a prelude to it. Chef Ramona Delic's guiding principle - that a dish without a provenance story is an incomplete dish - runs through every plate leaving both kitchens.

Market-Reactive Menus

Forge & Fold's menu is rewritten each Monday based on what Marrickville Organic Food Market traders bring in, ensuring no two weekly visits produce the same dish.

Wood-Fire Mastery

Ironbark and red gum logs sourced from the NSW tablelands fuel a custom-built hearth at Forge & Fold's centre, giving every main course a smoke signature impossible to replicate on gas.

The Counting Room Degustation

Sixteen seats, seven courses, and a chef's narrative delivered table-side - The Counting Room runs one seating per evening, Tuesday through Saturday, with no repeat menus across any given month.

Producer Introductions

Guests who book The Counting Room receive a printed producer card for each course, naming the specific farm, market stall, or artisan responsible for the primary ingredient.

Private Dining Rooms

Three soundproofed private rooms seating between eight and twenty guests offer full access to either kitchen's menu, with a dedicated chef assigned for the duration of the booking.

Chef's Table Residency

A monthly two-night residency program invites guest chefs from across Sydney's inner west to take full creative control of The Counting Room - a format that has hosted Vietnamese-French hybrids, live-fire Korean, and Levantine slow-cook nights.
