The Goreva Hotel Haven Rooftop Kitchen Garden is not decorative - it is a functioning production space that supplies both dining venues with fresh herbs, edible flowers, and microgreens harvested at the peak of each plant's flavour curve rather than at logistical convenience. Managed by a dedicated garden coordinator who works in direct communication with the kitchen brigade, the garden's planting schedule is dictated by the menus rather than the other way around: if Chef Delic wants shiso for a coming week's degustation, it is growing two floors above the kitchen. Guests are welcome to visit the garden during guided morning sessions and to participate in seasonal planting days that connect the hotel's food philosophy to something tangible and growing.
Daily Kitchen Harvest
Garden staff conduct a morning harvest six days a week, delivering fresh cuts directly to the Forge & Fold and Counting Room kitchens before the first mise en place of the day begins.
Guided Garden Mornings
Open to all hotel guests on Tuesday and Friday mornings, 45-minute guided tours of the rooftop space include commentary from the garden coordinator on what is currently growing and which dishes it will appear in.
Seasonal Planting Days
Quarterly public planting sessions invite both hotel guests and Marrickville locals to help establish new seasonal beds - building a community relationship with the garden that reflects the neighbourhood's collaborative food culture.
Pre-Function Garden Access
Event bookings of forty or more guests may use the rooftop garden as a pre-function gathering space, with a standing harvest table assembled from that morning's crop and positioned among the planting beds.
Take-Home Seedling Kits
Guests checking out after a stay of two or more nights are offered a small seedling kit - propagated from the hotel's own stock - along with a card describing the variety and a recipe suggestion from the kitchen team.
Chef-Garden Dinner Series
Four times a year, the rooftop hosts a twelve-seat dinner cooked entirely from ingredients grown or produced within the garden and the hotel's immediate five-kilometre sourcing radius - a format where the menu is finalised the morning of the event based on that day's harvest.
